Details

The antioxidant activity of (-)- epicatechin in buckwheat was studied.The scavenging experiments of superoxide anion showed that the antioxidant rate reached 83.08%.Hydroxyl radical scavenging experiment showed that the effect of the mass concentration of the active substance on the clearance rate was extremely significant (P < 0.01), and the clearance rate reached 77.30% when the mass concentration was 0.350 mg/m L.The reduction force test showed that the reduction force reached 48.02% of VC with the same mass concentration, and the influence of the mass concentration on the reduction force was significantly different (P < 0.01).The content of active substance in ethanol extract reached 1.40 mg/m L, accounting for 2.52% of the dry matter of root tuber.The results showed that buckwheat (-)- epicatechin had good antioxidant activity.
